When the weather is hot nothing tastes better than a light, flavorful salad made from fresh seasonal ingredients!
Admittedly the kitchen is not my favorite place, so I'm not whipping up new recipes on my own. I'm always looking for something a little different, the easier the better! These five salads from Eating Well offer a wide variety of flavors to make a quick delicious and nutritious summer meal!
Grilled Corn Salad with Black Beans & Rice
In the mood for Tex Mex? Satisfy your cravings with this light salad that combines grilled corn, fresh veggies, black beans, and rice, with a fresh citrus salsa dressing! This can be a stand alone meal or a side dish. If you follow the recipe as is it's vegan, and pretty low protein, but you could easily add your own grilled protein to increase your protein intake!
Spring roll Salad
I LOVE spring rolls! However, I try to keep the deep fried food to a minimum. This salad is a beautiful rainbow of fresh veggies, shrimp, and rice topped with (my favorite part) a delicious peanut dressing. For a plant based option substitute tofu for shrimp or opt out of a protein altogether!
Pineapple and Cucumber Salad
Pineapple is one of my favorite fruits! I even love it on my pizza. This refreshing side dish is the perfect accompaniment to grilled meat, fresh fish, or seafood. If you love the combo of heat and sweet you can add jalapeno to kick it up a notch!
Shrimp Cobb Salad with Dijon Dressing
Are you a fan of Cobb Salad? If so, try this fresh variation where shrimp takes center stage! I love the combination of flavors and textures the Cobb delivers. Who doesn't love bacon, avocado, and cheese?! One advantage of making your own is the ability to alter the amount of high calorie ingredients to fit your goals. In addition to flavor this salad is packed with a whopping 29 g of protein per serving!
Chili Rubbed Flank Steak Salad
Last but not least, if you're in the mood for steak, this south-west inspired salad will satisfy that craving. Grilled steak, sliced thin on top of a bed of fresh romaine, peppers, onions, black beans, and corn topped with a creamy citrus cilantro dressing and crunchy pepitas. Yes, please!
