When the weather is hot nothing tastes better than a light, flavorful salad made from fresh seasonal ingredients! Admittedly the kitchen is not my favorite place, so I'm not whipping up new recipes on my own. I'm always looking for something a little different, the easier the better! Satisfy your cravings with this light salad that combines grilled corn, fresh veggies, black beans, and rice, with a fresh citrus salsa dressing! This can be a stand alone meal or a side dish. If you follow the recipe as is it's vegan, and pretty low protein, but you could easily add your own grilled protein to increase your protein intake!
Spring roll Salad I LOVE spring rolls! However, I try to keep the deep fried food to a minimum. This salad is a beautiful rainbow of fresh veggies, shrimp, and rice topped with (my favorite part) a delicious peanut dressing. For a plant based option substitute tofu for shrimp or opt out of a protein altogether!

Chili Rubbed Flank Steak SaladLast but not least, if you're in the mood for steak, this south-west inspired salad will satisfy that craving. Grilled steak, sliced thin on top of a bed of fresh romaine, peppers, onions, black beans, and corn topped with a creamy citrus cilantro dressing and crunchy pepitas. Yes, please!
