Keep Cool With These Nutritious Frozen Treats!

Satisfy your sweet tooth and cool off this summer with one (or all) of these delicious frozen treats!

Who needs added sugar? Fresh fruit is the star that sweetens most of these frozen delights.  Protein packed Greek yogurt and cottage cheese provide the creamy base for the "ice cream" we crave on hot summer days! 

What's your favorite flavor?  I'm partial to the chocolate cherry nice cream and the pineapple dole whip!  So refreshing!  

Pineapple Dole Whip

Three ingredients for a delicious summer treat that will take you back to Disney!

  • 6-7 cups frozen pineapple
  • ½ cup coconut milk (more as needed)
  • 1-3 TBSP honey, maple syrup, or agave to taste​
    • Directions:
    1. Place frozen pineapple chunks in a food processor together with ½ cup of coconut milk. Process until the mixture is smooth and creamy. Scrape down the sides and add more milk as needed to achieve a smooth consistency.
    2. Taste the pineapple whip and add sweetener to your liking. 
    3. To achieve a soft serve-like look, fit a piping bag with a star tip. Fill the pineapple whip into the bag and pipe into serving bowls in a swirling motion.
Serves 6

Greek Yogurt Fudge pops

Craving a creamy chocolate treat?  Try this high protein, healthy take on fudgesicles. 
​ 
  • 8 ounces semisweet chocolate chips
  • 1 1/2 cups 1-percent milk
  • 1/3 cup unsweetened cocoa powder
  • 1 TBSP honey or maple syrup
  • 1 tsp vanilla
  • 1/4 tsp Kosher salt
  • 1 cup 2% Greek yogurt
    • ​Directions:
    1. ​Put the chocolate chips into a medium glass mixing bowl. Set aside.
    2. Combine the milk, cocoa powder, sugar, vanilla and 1/4 teaspoon salt in a medium saucepan over medium heat. Whisk constantly until the cocoa is dissolved and the mixture comes to a simmer, 5 to 7 minutes. Remove from the heat and pour the milk mixture over the chocolate. Let stand for 5 minutes, then whisk gently until all the chocolate is melted. Whisk in the yogurt until smooth and blended, then cool completely.
    3. Divide the mixture evenly among eight popsicle molds (about 1/3 cup per pop) and freeze until solid, at least 5 hours. (They'll keep up to a month.) Just before serving, briefly run the molds under hot water to release the pops.
Serves 8

Cottage Cheese Ice Cream

This has been a viral hit on Tik Tok (or so my kids tell me).  I LOVE cottage cheese.  It's an awesome high protein snack.  It also makes a great creamy base for a sweet summer treat!  If you're not a fan of the texture of cottage cheese, you may still enjoy this creamy snack and there are so many ingredient options to create your favorite flavor. 

For the base:
  • 24 oz of full fat cottage cheese
  • 1/3 cup of your preferred sweetener (honey, maple syrup, or agave nectar)
  • 1 tsp of vanilla extract
  • Pinch of sea salt (optional)

Make your favorite flavor:

Berry Cheesecake
  • 1/2 to 1 cup of your choice of berries; cherries, strawberries, blackberries, blueberries
  • 1/4 - 1/3 cup of crushed graham crackers

Peanut Butter Chocolate
  • 1/3 cup of peanut butter
  • 1/3 cup of chocolate chips

Mint Chocolate Chip
  • 1/4 tsp of peppermint extract
  • 1/4 cup of chocolate chips

Directions:
  1. Add cottage cheese, sweetener, honey and berries, peanut butter or other extracts to the blender or food processor.  
  2. Blend until smooth
  3. Add additional ingredients that you want to remain more intact i.e. chocolate chips or graham crackers.
  4. Pulse until mixed.
  5. Spoon mixture into a loaf pan or freezer safe dish.
  6. Freeze at least 1-2 hours.
  7. If freezing longer or overnight allow to thaw 30-60 minutes in the fridge, or 5-15 minutes on the counter before serving to allow the ice cream to soften enough to scoop.

"Nice Cream" 4 ways

Typically "nice cream" is made with frozen bananas as the base.  I happen to be allergic to raw bananas, so I've included a few options that are banana free for those who need or prefer other options.

Strawberry Mango:
  • 1 1/2 cups frozen mango chunks
  • 1 cup frozen strawberries
  • 1 TBPS lime juice
    • Directions:
    1. Place mango, strawberries and lime juice in a food processor; process for 1 to 2 minutes. Stop the processor and scrape down the sides. Continue processing until smooth, an additional 2 to 3 minutes, adding up to 1/2 cup water to help process the fruit, if necessary.
Serves 4

Chocolate Banana:
  • 2 bananas chopped and frozen
  • 1-2 TBSP of cocoa or raw cacao powder.
    • Directions:
    1. Peel the bananas and cut them into small pieces.
    2. Freeze them for 1 or 2 hours on a plate lined with parchment paper.
    3. Put the frozen bananas into a food processor or blender and pulse until smooth. Scrape down the sides as necessary.
    4. When the mixture is smooth, add the cocoa powder and blend until incorporated.
Serves 1


Chocolate Cherry:
  • ½ avocado
  • 1 cup frozen cherries
  • 2 tsp raw honey or maple syrup
  • 1 TBSP cocoa powder
  • 4-5 TBSP milk of your choice as needed
  • 1 tsp vanilla extract
  • dash sea salt
    • Directions
    1. Blend until smooth and creamy (add a dash or two of stevia for extra sweetness).
    2. Enjoy!
Serves 1


Tropical:
  • 2 cups frozen mango pieces
  • 5 Medjool dates
  • 3-4 TBSP canned coconut milk see note
  • Top it with dried and fine coconut shreds optional
    • ​Directions:
    1. ​Place first the dates and the coconut cream into a high-speed blender or food processor, then add the frozen mangos.
    2. Turn the blender on, starting with the lowest speed setting, then turning the power to the highest speed setting. For a Vitamix, use the tamper tool to rotate the ingredients. Blend until you get a beautiful creamy soft-serve consistency with no fruit chunks left.
    3. For harder scoop-able ice cream, transfer to a freezer-safe dish and freeze for 2 hours. Scoop and serve with your favorite toppings.
    4. You can store leftover ice cream in a covered container for up to 3 months. When ready to serve, let it first sit at room temperature for 15 to 20 minutes to make it scoop-able again.
